Orange Rind Butter Cake

This recipe makes for a pretty decent butter cake. You can change the type of fruit you like to put in by substituting accordingly e.g. 1 banana instead of 1 orange.

Preparation time is about 15mins, while baking time is around 50mins.

Ingredients
125g butter (or half a slab!)
90g castor sugar (if you like it sweeter, can add 10g more)
100g self raising flour, sifted
2 whole medium size eggs
2 additional egg yolks
1/2 tsp vanilla essence
1 tablespoon whipping or nestle cream
Zest of 1 orange
1 orange to be squeezed for the juice

Method
1. Cream butter and sugar together using the low speed. When butter is creamy and a shade lighter, it is done.
2. Slowly add beaten eggs, cream and vanilla essence a bit at a time. Cream the mixture well after each addition. (this is so that it will not curdle)
3, Fold/beat in flour with metal/plastic spoon.
4. Fold/beat in zest and juice.
5. Line cake tin with baking paper (am lazy, didn't want to do a lot of cleaning!) and pour in mixture.
6. Bake at 160deg, middle shelf for 50mins (to put in a toothpick to check, if it comes out clean, it is cooked / when cake has a nice dark golden brown crust)
