
Preparation Time is about 5mins, cooking time is about 10mins.

Ingredients
2 medium eggs
1/2 slice ham
Several mushrooms (I like shitake, brown or white mushrooms, but largely your preference!)
2 teaspoon olive oil
1/4 green pepper
1/4 tomato
1 tablespoon milk
A few drops of soy sauce
1/2 slice kraft cheese or shredded mozzarella
A pinch of parsley (and any other herbs that you might like)
Method
1. Beat the eggs, milk and parsley together.
2. Heat the olive oil in a pan.
3. Lightly fry mushrooms, ham, tomato and green pepper until mushroom turns slightly brown.
4. Pour in the beaten eggs mixture over the ingredients and spread it out to cover the base of the pan.
5. When the eggs are firm at the bottom but still runny on top, place the cheese on one side.
6. When cheese has melted, slide the omelette onto a plate and fold/roll it.
