Red Skin Potato Salad

Needed a staple to go with my chicken and lamb chops today, so tried out this simple potato salad!
Preparation Time is about 5mins (largely dependent on how fast you chop your shallots!) while cooking time is about 25mins.

Serving Size: 4 pax as a side dish

Ingredients
5 medium size red skin potatoes
1 small shallot / onion
2 tablespoons mayonnaise
1 tablespoon milk
1 slice ham
salt and pepper
1 hard boiled egg (optional)
Bacon bits (optional)

Method
1. Clean the potatoes, do not remove the skin.
2. Bring a pot of water to boil, add 1/2 tea spoon salt. Place the potatoes inside and cook for 15 mins or until firm.
3. Remove potatoes from water and leave it to cool. Cut them up into quarters or eighths, depending on preference.
4. Chop the shallot finely and cut the ham into slices.
5. Gently toss together potatoes, shallots, ham, mayonnaise, milk, salt and pepper. Serve chilled.
